An estimated 50% of all Americans are overweight.  Food is abundant and the variety tremendous.  Americans are exploring cuisines from around the world and eating out at an increasing rate.  The problem with Americans eating patterns is the large amount of fat, salt, and sugar combined with a lack of awareness of serving sizes.  If we want our cake and eat it too, then we need to find ways to maintain the flavor and characteristics of the classic dishes we love while using lowfat and lower sugar ingredients.  Your quest is to find healthy alternatives without sacrificing flavor and texture.
