he world may not be your oyster, but there is a world of oysters, foods, and recipes available to tempt your palate.  You may not be able to travel to Timbuktu but you can find Turkish delights on the internet to test and taste in your home.  The goal of this culinary webquest is to develop a cookbook of classic favorites from around the world that are naturally low in fat, salt, and sugar or have been altered in your test kitchens to lower fat, salt, and sugar while maintaining the flavor adventure.

our quest has two parts.  

art I is learning about fats, salt, and sugar in foods and healthy substitutions.  This information will be compiled into an easy to use guide that helps you alter favorite recipes.  This guide will be included in the cookbook.

art II sends you on a journey through cuisines of the world to discover classics dishes and healthier variations of the classics. Using the guidelines developed in Part I you will develop healthy versions to compile into a cookbook.
